Gabriel caught a mild cold this week. So we discovered the kid's tv show "Blue's Clues" through NetFlix as a distraction. It's his new favorite show!! Here he is hugging Wall-E and watching Blue's Clues with a big grin. Animal cookies in a box, need I say more?! I made fudge for the first time. I found a super simple recipe while flipping through a cookbook to find a recipe for dinner (heehee). It was delicious but a little on the caramel side for texture.
Foolproof fudge as found on the label of a can of sweetened condensed milk:
3 cups semi sweet chocolate chips (dark chocolate if possible) 1 (14 oz) can sweetened condensed milk (for dairy intolerant, use non dairy milk, add powdered sugar until consistency of sweetened condensed milk) dash of salt 1/2 to 1 cup chopped nuts 1-1/2 teaspoons of flavoring (vanilla, mint, cherry, coconut, etc)
over low heat, melt chips, milk and salt. Remove from heat, add nuts and flavoring. Spread evenly into buttered, or wax papered 8 or 9 inch square pan. Chill 2 hrs or until firm. Turn fudge onto cutting board, peel off paper and cut into squares. Store in loosely covered container at room temperature.
Very easy, always sets up, good stuff.
the only time it did not set up for me was when I added cherries. You can add candy, coconut, sprinkles, be creative.
Sorry to hear Gabriel caught a cold, hope the rest of you stay healthy. He looks adorable sitting there on the couch with his wall-e engrossed in his blue's clues. Too cute.
Love the box shot eating cookies, what a little charmer.
